Bronze-drawn pasta is the most requested by lovers of traditional dry pasta. By bronze drawn pasta we mean the extrusion of the mixture of water and semolina through a bronze die, that is a perforated matrix with different shapes, to obtain the pasta. The die is often made up of heavy bronze discs, to be positioned from time to time to obtain the desired format.

To the touch, the bronze-drawn pasta is rough and porous, a fundamental characteristic that allows it to optimally retain various sauces and condiments.
