These “Pici” are made with carefully selected quality ingredients, where the durum wheat semolina of Tuscan origin is mixed with pure water from our hills, while the bronze drawing takes place, to obtain a roughness such that the pasta can accommodate and retain the sauce. The drying that takes place slowly at a low temperature is also fundamental.
All methods that contribute to making an exceptional pasta with all the organoleptic characteristics unaltered, with a natural and genuine taste that only traditional pasta can give.
They are excellent for the preparation of dry pasta with thick and full-bodied sauces and ragout of pork, beef or game. Also excellent with pesto and vegetable and vegetable sauces, they amaze with simple and poor traditional sauces such as “all'aglione”.
