The Tuscan Ham PDO (Prosciutto), in the Whole Bone-In classic version, has very ancient origins that go as far as the Etruscans through Charlemagne, during whose reign there were already precise rules for the processing and conservation of pork meat. But, as you can easily imagine, it was the Medici who regulated its production in all its phases, making it an inevitable delicacy on their tables.
Tuscan Ham PDO (Prosciutto) - Whole Bone-In is made using only and exclusively native pigs whose legs are processed by removing, first of all, the foot, the rind and the fat inside the thigh. However, the PDO specification also allows the use of pigs born, raised and slaughtered in the territories of Umbria, Lazio, Emilia-Romagna and Marche, as well as of course Tuscany.
The dehydration and salting of the meat take place by massaging it carefully and in depth with salt, pepper and natural flavors, while the uncovered part of the pulp is coated with lard, flour, salt, pepper and natural flavors. As for the seasoning, for hams weighing less than 8.5 kg it must not be less than 10 months, while those that exceed this weight must reach 12 months.
The rounded shape of Tuscan Ham PDO (Prosciutto) - Whole Bone-In is easily recognizable and its weight can vary from 9 kg to 10 kg. Its interior is characterized by a bright red or slightly lighter flesh on which the fat is barely visible if not practically absent.
