“Giovane” Slightly Aged Pecorino.
The “Giovane” Slightly Aged Pecorino is a cheese that lends itself to multiple ways of consumption, thanks to its soft texture and its characteristic “creaminess” it can be consumed both raw and as an ingredient for many recipes.
Its peculiarity lies precisely in the softness, if kept at room temperature it tends to cremate, reaching a delicate and spreadable consistency with the use of a knife: it breaks down easily and becomes an excellent cream cheese to spread on bread or use as a cheese for first courses. Also suitable for those who prefer raw cheeses to accompany second courses, for example in combination with Boneless Cured Pork Leg (Prosciutto) and broad beans.
The product is ideal for the preparation of Pecorino fondues, but those who love strong flavors can also accompany this cheese with contrasting foods.
Slightly aged cheeses, such as this soft Pecorino, in fact, go well with jams and marmalades with a sour taste, such as those based on pears or lemons.
Whether for an appetizer or a second course, the “Giovane” Slightly Aged Pecorino always gives an extra touch of flavor to every recipe. When dissolved on pasta, it gives first courses a strong and intense taste, its delicacy of flavor combines pleasantly with the other ingredients without ever overwhelming the taste.
This cheese is not processed in rind, and for this reason it has a tendency to develop mold from the first days of opening the package: a peculiarity that can be easily avoided by using a wet sponge.
“Giovane” Slightly Aged Pecorino is a soft cheese characterized by high quality, not surprisingly in 2014 it was ranked among the best fresh Italian Pecorino cheese, winning third place in the “San Lucio Trophy” competition. In 2017 he received the nomination at the “Italian Cheese Awards”.
