“Crosta Rossa” Semi-Aged Pecorino.
“Crosta Rossa” Semi-Aged Pecorino is made using only pure sheep’s milk: the processing used allows to obtain a cheese with a delicate and intense taste at the same time, soft and easily combined with a large variety of recipes: not only as a grated cheese for first courses, but also as a product to accompany bread.
The cheese is handcrafted: at first it is left to rest in special refining cells (for about 30-60 days), then it is subjected to washing to eliminate molds. The crust is then processed, using olive oil and tomato concentrate.
What characterizes this product is its unmistakable refined flavor, being a semi-aged cheese, it has a peculiar acid taste that makes it one of the most versatile dairy products to bring to the table.
“Crosta Rossa” Semi-Aged Pecorino is in fact combined with a multitude of foods: true connoisseurs can accompany it with delicate honey, which will noticeably highlight the taste of the soft cheese and its delicate taste. Another perfect match is given by pears, walnuts and Boneless Cured Pork Leg (Prosciutto).
Those who love Genoese pesto can try the combination with basil, which unlike Reggiano Parmesan gives the recipe a much more intense flavor. Those who want to try the “Crosta Rossa” Semi-Aged Pecorino for a snack can resort to the classic combination with dried figs, to be enjoyed over a slice of cheese accompanied by bread.
As this is a product worked in rind, it has a tendency to form mold on it, which can be removed with olive oil or using a wet sponge.

Ingredients: Pasteurized sheep's milk, salt, rennet, lactic ferments. Crust treated with tomato concentrate and preservative E 235. Inedible rind. Origin of milk: Italy.
How to store: Store in the fridge between 0° C - +4° C.
