“Pistacchino” Pecorino With Pistachio.
Made with 100% Italian sheep’s milk and pieces of pistachio (for a total of 2% of the product), the “Pistacchino” Pecorino With Pistachio by De’ Magi is a unique and tasty flavored cheese, made with a processing method different from that of any other.
During cheese making, especially after adding the rennet to the milk, the pistachio pieces are inserted into the mixer, so that they immediately attribute their aroma to the curd and therefore to the cheese. All the ingredients are of the highest quality, completely of Italian origin.
The innermost part of the form is softer and covered by a thick crust, slightly canestrata and yellowish in color, also entirely edible and on which the pieces of pistachio are visible.
The product has lactic hints of cooked butter, which go well with the vegetable scent given by dried fruit. This pecorino has the sweet component that slightly prevails over the salty one. Its pleasant lumpy texture makes the cheese not particularly soluble.
“Pistacchino” Pecorino can be eaten alone, or made the protagonist of recipes and accompaniments. This cheese can give an extra note of flavor to a plate of linguine with pecorino and walnut cream, or to a very special egg white and pecorino omelette. It can also be grated on a risotto with vegetables or on a pasta with pesto, even better if made with pistachio, which can be made at home with the addition of the same pecorino for an even more creamy result. Moreover, it is particularly pleasant in accompaniment to olives, grapes and figs, as well as to Boneless Cured Pork Leg (Prosciutto) or Chianina Meat Bresaola, with which it can be eaten melted or in platters of appetizers, sandwiches and wraps.
Being a Pecorino with the addition of pistachios, the most recommended wines for accompaniment are full-bodied reds, such as a “Chianti” - Camperchi, or light and fragrant whites capable of giving balance without overlapping the flavor of the cheese.
