The phases following the selection of the meat require that it is massaged by expert hands with aromatic spices and coarse salt that will have the opportunity to perfume and flavor it during a resting phase that lasts at least six months. After this time, the Cinta Senese PDO Pork Fatback (Lardo) is ready to be tasted both raw and in tasty preparations such as, for example, first courses and soups.
