Verna is an ancient variety of wheat of Tuscan origin, currently widespread in Valdichiana and Val d'Orcia. Its name derives from Monte Verna in Casentino, where it was cultivated in the past by the Casentino friars. Much appreciated in the past for its characteristics of great rusticity, it was then forgotten for many years, because it was decidedly less productive than modern varieties.

The soft wheat of the “Verna” variety is characterized by a modest protein content which makes it particularly interesting for people with food intolerances.

The Verna grain contains 12% of proteins and the most abundant are albumin, globulins, glycoproteins. Among these proteins we find gluten, a substance that makes it easier to process flour both for the production of pasta and bread.
