Rum “Panzuppo”
The Rum “Panzuppo”, from the Fabio e Gianni pastry shop, is a variant of the Tuscan Panzuppo, a sweet appreciated throughout Italy that recalls the panettone or the colomba. Like the latter, Panzuppo is a dessert that recalls the holidays, and is the ideal end to dinners with family or guests.
This confectionery product was born from the creativity in reinventing the tradition of the Fabio e Gianni pastry shop, one of the most appreciated and renowned in the province of Arezzo. The product is contained in the elegant confectionery confectionery, which also makes it perfect as a gift.
The “Panzuppo” is made in several variations, and what differentiates this “Panzuppo” from the classic one is the wetting of the dough, made with a rum distillate instead of fortified wine. Furthermore, the Rum “Panzuppo” is richly stuffed with dark chocolate chips instead of raisins. These, together with the rum and cocoa powder in the dough, give the product its pleasant and enveloping bittersweet flavor, perfect as a snack or after meals.
The “Panzuppo” is made with “00” type soft wheat flour to which, among other things, butter, sugar and eggs are added to make the dough soft and sweet. All ingredients of refined quality.
Once the Rum “Panzuppo” mixture is ready, it is placed in the cups, where the slow 36-hour natural leavening begins. This is the key step to obtain a light and fragrant dough after cooking.
This “Panzuppo” is excellent to consume together with an excellent rum or whiskey, and this can make an after dinner really special. If, on the other hand, wine is preferred, the choice will have to fall on a sweet wine, which can be sparkling, for the right atmosphere during the holidays, or with “Alò” - Buccelletti, a fruity Tuscan passito.

Ingredients: Type “00” granotenero flour, dark chocolate, butter, sugar, egg yolk, natural yeast, emulsifier: E 471, skim milk powder, cocoa powder, salt, dextrose, whey powder, flavorings natural. Internal wetting (about 18%): sugar, water, rum distillate 16% vol.
