The recipe for Rolled Bacon comes from a centuries-old tradition still present in many areas of Italy and especially in Tuscany. To keep two pieces of bacon longer in view of the winter, the rind was removed, rolling them to form a cylindrical slice.
This product is prepared with the use of the pork belly which, once trimmed is processed with salt, pepper and aromatic herbs and after a short period of salting is rolled up and tied. When cut it has a bright red color, rich in spicy aromas and an intense flavor.
Rolled pancetta is eaten in thin slices, raw in cold cuts boards accompanied by bread, flatbread, focaccia, tigelle or other baked goods.
