“Panzuppo” is a Tuscan dessert produced by the Fabio E Gianni pastry shop. Its shape, the slow natural leavening and the presence of raisins make it similar to the milanese panettone, but the main difference lies in the wetting inside, made up of water, sugar and fortified wine which gives it its characteristic aroma and flavor.

“Panzuppo” is a Tuscan confectionery product appreciated throughout Italy. The result of a very slow, completely natural leavening of the “00” flour mixture enriched with precious sultanas.
This dessert from the Fabio E Gianni pastry shop is suitable for all occasions, but it is perfect for the holiday season. The combination of elements of tradition and pastry creativity, in fact, makes this dessert very similar to the classic Christmas panettone. But the element that distinguishes it, and which makes it highly appreciated, is the presence of the wetting inside which offers the palate hints of fortified wine and sugar. The wetting is done with sugar (about 18%), water and 16 degrees fortified wine.
The “Panzuppo” dough is made with top quality ingredients, which once ready is left to a very slow natural leavening for 36 hours. It is then inserted into the appropriate form (called “pirottino”) for cooking in the oven and then placed upside down to rest. This last operation allows the hot dough not to deflate, as well as retaining moisture to keep it soft.
The butter and sugar in the dough give the product softness and a sweet taste, well accompanied by cocoa powder and pleasant hints of grapes, given by the liqueur wine and candied grapes.
By virtue of the fortified wine inside, this dessert is exceptional when consumed with a dessert wine, such as a good Vin Santo, or with “Alò” - Buccelletti, a fruity Tuscan passito.

Ingredients: Type “00” black grain flour, sultanas, butter, sugar, egg yolk, natural yeast, emulsifier: E 471, skim milk powder, cocoa powder, salt, dextrose, whey powder, flavorings natural. Internal wetting (about 18%): sugar, water, fortified wine 16% vol.
